Abstract

The article examines modern aspects of applying the Just-in-Time (JIT) concept to food industry enterprises. The historical development of the concept, its core principles, implementation methods, and the specific challenges of adapting it to an industry with short production cycles have been analyzed. The key advantages of JIT, including inventory reduction, improved product quality, and lower storage and transportation costs, have been identified. The study describes the risks arising from supply disruptions, seasonality, demand fluctuations, and food safety requirements. The paper proposes a set of methods for improving food enterprise business processes by augmenting the JIT logistics system with modern information technologies: enterprise management systems (ERP, MES, and WMS), Internet of Things (IoT) technologies, Big Data analytics, and artificial intelligence (AI). Using examples from food industry enterprises, the article suggests ways to apply regression analysis, clustering, association rules, forecasting, and artificial neural networks within the JIT framework. Adapting the JIT concept to the operational environment of Ukrainian food enterprises and integrating it with modern IT solutions can enhance their competitiveness in both domestic and international markets. The success of this approach largely depends on the availability of state support, modernization of production facilities, employee engagement, and the creation of an appropriate information environment. The implementation of the JIT concept, integrated with AI methods into an enterprise information system, will contribute to reducing production costs and overall expenses, and, consequently, increasing profitability.
